As stated on my Instagram account I have been on hiatus and on my About Me page I explained what has happened during my absence. Now I'm back BI-ATCHES!!! With a new approach on the blog; no more restaurant reviews and more food documentation. Restaurant reviews can be found on Google Maps and you can find mine by going on my Google +. As for food documentation, I'm going to use my blog to do more food event experiences, food challenges, top favorite lists and recipes and reflection on those recipes.
2017 has so much to offer, so many challenges to face and so much I have planned. One of those plans is a vegan challenge, very simple, be vegan for a month. My best friend from college was telling me about how she's done with meat, for a while, and how she doesn't have a taste for it and she was thinking of being vegan for a month since she has been eating vegan for a while. She also mentioned being vegan challenges how one uses spices to create flavor in vegetables and how to create flavor in spices in general. In a way to support her I decided to also do this challenge as well; she made a good point.
When we both decided to pledge on being vegan for the month, my initial thought was how the 'F' was I going to accomplish this 180 degree diet. Go cold turkey from chicken, from butter, and especially from cheese. Ugh!! Thank goodness I knew someone who is vegan and very dedicated to helping those who want to go down the vegan route; Laura O' Connell, co-founder of Hangry Vegans (+Hangry Vegans) and dedicated vegan herself. She was able to provided such in great detail to Christie and I about the vegan lifestyle.
She answered all my questions before I could even ask them and she provided great materials on my one month journey; maybe even more if I get this all down.
It's more than materials to be successful and another way to keep me on track was to meal plan and prep. I have to say if I didn't do it, I would have failed. . . yeah, totally fail. I have prepared my breakfast, AM snack, lunch, PM snack, and half my dinner all in one go tonight. I have researched the last two weeks on making a menu that will be suitable with busy schedule.
I'm really winging this blog and since this is an introduction I'm probably going to share more in depth the recipes, websites, books, and documents I used in achieving of being vegan.
RECAP
1. Going vegan for the month of January (minus today because I had left overs and I can't have left overs go to waste). 30 DAYS
2. Hangry Vegans are my lifesaver (INSTAGRAM: @hangryvegans) and a great source in vegan food.
3. In connection with #2, researching makes things so much better and it gave me ideas so I'm not eating peanut and butter jelly on rice. . . sounds unappetizing yes, but it's vegan.
4. Meal planning and prepping will help me keep on track.
5. Having an overall supportive group amps up my adrenaline on really accomplishing this feat.
This upcoming week I will be sharing the recipes I used for the week and some discoveries I made. Wish me luck everybody, my body is going to be in for an interesting awakening. ^___^
