The Vegan Diaries: Week 2 Recipes

Welcome to the second week of The Vegan Diaries. I've had a couple of slip ups and it's not because I was stir crazy and craving. It was because they were convenient. As I stated before, one of the biggest reasons I would be successful in this month would be my meal planning and prepping. The times I slipped up was because it was not planned at a convenient time.

For example, this week I'm going to a crab feed. I was invited; bought the ticket without second guessing. . . Actually that was timed. Okay, what I said is not helping my cause. As a foodie, I can't say no to AYCE events at time, especially crab.

Half-way through the week and it's been pretty good. I'm also eating items I'm more familiar in tastes. Here are the recipes I planned for this week. Butternut squash is new to me so watch out for my reflection post at the end of this week. Also remember, all these recipes can be altered to your liking.


Hungry Brownie, Teriyaki Tofu (used for my teriyaki bowl)

This recipe is freakin amazing!!! Homemade teriyaki sauce is way more fulfilling than sitting-on-the-store-shelf teriyaki sauce.

NOTES
- Use FIRM tofu, the soft one will disintegrate while you're mixing it in the marinade
- DO NOT use extra firm tofu (the texture doesn't do the bowl justice and it doesn't absorb the marinade as much as the firm one)
- If you do not have cornstarch on hand (like I did) you can use potato starch, flour, or tapioca flour (which I used and did great in thickening the sauce)
- Also did not have ginger on had so I used 1/4 tsp of ground ginger,
- Good in cooking all in one go and eat throughout the next couple of days (2-3)
- Teriyaki sauce can be refrigerated for one week

-The only substitute I made was instead of chicken broth I used vegetable broth.
- Completely forgot the butter, substitute the butter. I use Smart Balance
-This can also be frozen, freeze 1 cup at a time and store in a freezer plastic bag

Thug Kitchen 101- Chickpea and Artichoke Heart Salad

I made it; did not take a picture. Totally forgot after trying it and finding out it was not up my alley. There are some tastes I still need to acquire. This is one of them and I really do not know how I can feel about artichoke hearts other than artichoke and spinach dip wise.
