The Vegan Diaries: Week 3 Reflection

This week sucked. The word 'suck' does not even describe how much this week did not work out with me. Halfway through the week, as I mentioned in my previous post.

CAUTION: THIS ENTRY WILL CONTAIN NON-VEGAN ITEMS. IF YOU ARE OFFENDED, CLOSE THE BROWSER. REMEMBER THIS IS A DIARY OF MY TIME BEING VEGAN. NOT TO SAY I AM VEGAN. NOBODY IS PERFECT.

Monday: I went out to Napa County and had a picnic with my friends Jenn and David. Even though wine is vegan [YES!!!] our picnic food was far from vegan paradise. Our cream cheese artichoke dip wasn't vegan and of course our crab cakes and then I had a pesto chicken sandwich. Then I had Taco Bell for dinner. This day was ridiculously good, I regret nothing.

Tuesday: So since I made butternut squash soup I had it for lunch and a little for dinner. Back on track with vegan life

Wednesday: Doing pretty well, work has gotten a little busy and a string of sickness starts to lurch. Morning was a little bit of a rush, and I'm so glad I've been making the green smoothie [found on my previous post]. Hoping butternut squash soup will help before it hits me. It was soup and bread, and an apple at the end of the day.

Thursday: I'm sick, it came and struck. This is when I start going to I'm-sick-and-I-need-to-get-better mode. Butternut squash soup did not satisfy my T-cells. So first things first, I have ramen with pork right after work. If I did not have ramen I would have went with pho or any noodle soup containing meat. It's my go-to sick meal. I also drank lots of chicken broth with lemon. Sorry Vegan Jazzmin, Sick Jazzmin trumps you and she wants a broth made from meat with meat and egg noodles.

Friday: Day two of my sickness, this time it escalated to a fever. Yeah that ramen did jack; my fever could have been worse. Before the fever reached me I was able to make some eggs and bread to give me something in my stomach since I had nothing to eat that morning. I slept majority of the time and had lots of tea and honey. I went with honey instead of agave because I had the worse cough and when I coughed it hurt my throat. Anyone who knows where I'm going with this understands.

Saturday: I had chicken-less tenders and vegetable pakoras which was a nice brunch. I also had a banana. When I got home I was back to sleep and I had tortilla chips and a burrito; couldn't say no to something spicy to clear up my nasal cavities. More tea and honey. It was also a movie night so some popcorn crept into my late snacking.

Sunday  (TODAY, at least for this entry). It was more broth and eggs. I should have made a tofu scramble, that would have been nice, however I used my tofu for the ricotta vegan cheese which now I am not a huge fan and I'm questioning nutritional yeast. Someone has to make me vegan ricotta cheese so I know how to freakin make it; goodness it tasted so bad. Today I stayed in because there was no way I wanted to go out in public with my illness. It also gave me time to work on homework, which I need to be ahead so I know what parts I suck at and so I can start studying for those topics. Really kept it to liquids today and some noodles.

Being sick this week drained my energy and my discipline into staying vegan. This experience has inspired me to look up recipes on those times where sickness takes over and what is the best route to take as a vegan. I also have to give a quick shoutout to Trader Joe's for being freakin awesome when it comes to vegan life. As I close in on the last week of me being vegan I really cross my fingers to accomplish 7 days straight. First things first, get better now!
