The Vegan Diaries: Week 1 Recipes

I have already slipped >__<
Totally had cream cheese with my bagel and even though it wasn't a lot I felt hella bad. Thank goodness there isn't someone scolding me or an instant consequence like instant shock. If that happened to me everytime I ate something not vegan then I don't know how I would do this month. Had to tell Laura about my slip up and I have to say she is such an amazing person. She's so freakin supportive and it makes me want to try even harder now to get through this month.

It's been two days so far; not bad. I'm also over spaghetti squash as quickly as I got into it. . . . too much spaghetti squash. . . so much spaghetti squash!! Ugh!! I'll probably give spaghetti another chance. . . next year. Being too eager became a weakness. At least the other things I've been eating have balanced out in flavor and taste.

Below are the recipes I used or planned to use to week; if I don't use it this week it will flow over into next week. They are all linked and when you read further you'll see the substitutes I made to make it more vegan friendly. Enjoy!! ^__^

This is my go-to recipe in general to make sweet potatoes especially for Thanksgiving. My variation of this recipe:
- Used coconut oil instead of olive oil
- Used agave nectar instead of honey
- Mixed in the agave and cinnamon after roasting

I love chia pudding!! There was this one time where I ate chia pudding so much I created an allergic reaction. . . I didn't know this was possible. This event still doesn't affect how much I love chia pudding. Chia pudding is considered my breakfast or dessert. . . my breakfast dessert!! My variation of this recipe:
- For the milk I did 1.5 cups of vanilla almond milk and 1.5 cups (or 1 can) of coconut milk with 1 tbsp of agave [SIDENOTE: This was more sweet than I expected]
- OR - 
- 1.5 Cups of almond milk and 1.5 cups (or 1 can) of coconut milk with 2-3 tbsp of agave, depends on your preference

I haven't tried this recipe yet and I almost did it earlier this week. My only variation of this recipe is instead of using honey, use agave. 


Thug Kitchen 101 - Cucumber Salad
There is no link because this was found in the book "Thug Kitchen 101" I would share the recipe however I don't want to get in trouble with copy write infringement or whatever. I will take a picture and upload this when I make it or look out for it next week.

Other than those recipes I roasted spaghetti squash and had everything else made; used pasta sauce from Trader Joe's and used the vegetable balls from Ikea. Then I bought Taylor Farms asian salad with the sesame dressing. Super simple kind of and as I go through this week I'll log what I ate because I don't want everyone to think this is easy, a little but I eat too much >__< So until next time!!
