Hello World!! I am back and planning to start a new short series, "Consuming Dublin". Before I do it is one of my favorite days of the week, Meal Crush Mondays!!
The Irish soda bread recipe I used was a recipe which was recommended to me long ago by a former co-worker; it was called Irresistable Irish Soda Bread . If there was one thing I found a little bit off was the Irish soda bread because you can really taste the baking soda. LIKE REALLY TASTE IT! I know that is the palette of the locals. It really complimented the soups I had and overall it's a very simple bread recipe because yeast is not involved at all. That cut my cooking time by a day, heheh.
After coming home from Ireland I was craving Guinness stew. The first time I tried this stew I was in college and was very hesitant about the use of beer in cooking. Well the taste wasn't bad and it was only memorable because of such a unique taste. Fast forward 100 million years later and here I was in the cafe of the Guinness Storehouse. I saw someone else order the stew and my LTM fired up like no tomorrow. This time it was 1000 times better than what I remembered and it was for a moment where I was taken back to a sophmore Jazzmin, almost like in Ratatouille when Anton was taken to his childhood. There was a warm fuzzy moment.
Then when I came back to the States I realized that the Irish pubs here cannot give Guinness any justice nor any Guinness stew justice. I had to take it into my own hands.
I looked into several Guinness recipes and even though they were promising it seemed there were too many ingredients involved in such a simple hearty dish. It didn't seem like there was too much in the stew at the Storehouse. Simple as simple gets.
After rotating a couple of recipes around I came to conclude with Chef John from Foodwishes
The stew itself was amazing of course having toaa fix some parts which I messed up. Following the recipe was pretty simple, not too much fluff. Straightforward and hearty stew. Of course I wouldn't leave my stew hanging out by itself, even though it was great by itself. I had to make mashed potatoes and of course Irish soda bread to top it off.

As for the mashed potatoes I used my go-to mashed potato recipe by Tyler Florence, Mashed Potatoes .
Put all of that wonderful food together with a pint of Guinness and it feels as though you're in Ireland for the first time. This a go-to stew to put together on those cold days, a "quick" stew to put together when you have company over, and a great meal to soak up all the alcohol you'll be drinking on St. Patty's Day. I'm glad I was able to satisfy my craving and my wallet with these awesome recipes. I do miss Ireland but this does just as good without whipping out my passport and spending gobs of money.
