As a blogger, I am finding out I am not good at being consistent and maintaining my website at all. >___< There is no excuse to be neglectful to my duties as a foodie.
So let me make it up by this post on BLUEBERRY MUFFINS!!
Blueberry muffins is the perfect morsel almost anytime of the day. . . nah I take back the 'almost', especially homemade ones. ;)
I made muffins using these two recipes (links provided):
For this recipe I added a 1/4 cup more blueberries and at one point I felt it needed more flour, but you don't. With the blueberries, I coated them in flour, it contained the blueberries much more cleanly. Usually when you don't coat the blueberries they tend to burst and drench the muffin in blueberry juice. Sounds sexy, isn't sexy in real life. These muffins came out moist and delicious and it was a mouthful of blueberries in each bite.
The next time I probably would half the cinnamon intake and increase to 1/2 cup of blueberries.
I decided to do a gluten-free version as well because gluten-free is definitely a thing nowadays. Not knocking on the carbs; totally made a full batch of carb loaded blueberry muffins. The variation I did with these muffins were:
- Used coconut oil instead of vegetable oil
- Used Bob Mills gluten-free flour mix
- Also coated the blueberries in the GF flour
- Halfed the batch because I don't want to eat GF muffins for the whole week
I haven't heard the feedback from my friend who I gave these muffins to, so once I hear back from here I will give you guys an update. ^^
