Meal Crush Monday: Breakfast Muffins

Quick entry today, I have so much studying and I woke up at 4:30 so my body is tapping out already.

Since I have been on the right track of exercising and preparing all my meals I thought of continuing by making something out of stuff I had in the fridge which was eggs and bacon. Of course my mornings have been tight on time so I thought of trying out the well-known eggs cups. . . breakfast cups.

I looked at a few sites and from what I gathered it's a pretty simple recipe. Here is my version which you can alter any way you want.

BREAKFAST MUFFINS makes 8 breakfast cups

Ingredients
8 eggs
8 slices of bacon
  * I oven baked the bacon slightly under from    
crispy at 425 which took 10-15. I say gauge it
    depending on what kind of oven you have *
1/2 C of sautéed mushrooms (I used the bacon fat to cook the mushrooms)
1 C of grated sharp cheddar cheese (or more or different cheeses)


Directions
1. Preheat oven to 350 and grease 8 muffin cups (I had a 12 cup muffin tin on hand)
2. Line the muffin cups you greased with the bacon. 1 Muffin Cup = 1 bacon & 1 egg
3. Scramble eggs and pour mixture into each of the cups with the bacon
4. Scoop a tablespoon (or a half more) of the sautéed mushrooms into each cup
5. Top each filled cup with the cheese
6. Fill the unused muffin cups halfway with water
7. Bake for 30-35 minutes or it can be less (again depending on your oven)
8. Cool for 10 minutes before taking them out

I also tried a Black Bean Brownie Recipe
Came out not as I suspected, so I will figure out how to make it better and get back to you on that. This recipe used very little flour so I might up the flour or really drain the beans. . . hmm we will see next time.
