The Keto Diaries: Week 1 Recipes

For meal prepping this week I did: 

Breakfast
- Bacon and Eggs
- Bulletproof coffee ( 1 tbsp Kerry Gold butter, 1 tbsp MCT oil, 1 tbsp collagen, and 2 tsp sugar free vanilla syrup) 

Lunch
- Chicken fajitas with oven roasted bell peppers
- Salvadorean sour cream
- Cheese (Cheddar - Tilamook) 
- Avocado

Dinner
- Umm usually I'm still stuffed for the day so I rarely had dinner or I had left over fajitas I didn't finish from lunch

Snacks
- Cashews
- Beef jerky
- Fat bombs (peanut butter & cream cheese and vanilla cheesecake)

This one I totally messed up, forgot to add the sweetener. Don't forget the sweetener or you're going to regret it unless you like an off tasting cheesecake.

Duuuuuuuddddeeeeeeeeee, these were so freakin delicious!! I didn't have erythirol on hand and used monk fruit sweetener instead. I could have used a fraction of what was used in the recipe because it was almost too sweet. I know! Too sweet? Well yeah there is a bliss point when it comes to sweets

Simple, purely simple. Can't really f*ck it up.
