The Keto Diaries: Week 2 Recipes

I love it when recipes come together to make an awesome meal and it totally happened this week. As stated on my reflections this past week I had pizza and even though I thought I squashed my craving with the cauliflower cheesy bread, my drunk self won the round. At least the heavy guilt I felt the next day will stay with me until these 3 months are up.


Cheeseboard's Papi Chulo Sauce

If you are from the Bay Area especially from the East Bay you probably had a chance to try Cheeseboard Collective in Berkeley. Other than being well known for their pizza they have this addicting green sauce named Papi Chulo. It's almost as addicting as the Orange Sauce from La Victoria but this is comparing apples and oranges. Once you had Papi all you want is Papi.

This recipe was ON POINT! The only substitute I made was the sugar portion where I substituted for monk fruit sweetener. In the end you couldn't tell the difference. Never again I have to order it from Cheeseboard, which is great because I'm trying to avoid pizza at all cost at the moment.

Ingredients:
- 1 cup butter, softened
- 4oz Cream Cheese
- 3/4 cup erythritol, powdered*
- 1 egg
- 2 cups almond flour
- 1/2 coconut flour
- 1/2 tsp baking powder
- 1 tsp vanilla extract**


Directions:
1. Preheat oven at 350 F
2. Place parchment paper on baking sheet
3. Cream butter and erythritol until light and fluffy
4. Beat in the cream cheese
5. Add the egg
6. Stir in flours and baking powder
7. Mix in vanilla
8. As you mix, you'll start to see a dough ball forming. At this point you can use your hands to        incorporate the ingredients thoroughly.
9. Chill the dough in the bowl for 30 minutes
10. Shape dough into a log shape, wrap in wax paper, and chill again for 2-3 hours so the dough solidifies
11. Slice log into cookies and place on prepared baking sheet
12. Bake cookies for 10-12 or until cookies begin to brown.***
13. Cool on baking sheet for 5 minutes before transferring to a cooling rack

* I took re
** I used 2 teaspoons of vanilla extract
*** This depends on your oven, I've noticed when I baked the cookie the next day it took longer to bake, around 15-17 minutes

These cookies are a-okay in my book, there is something with the sugar which I'm not used to. If I were to make this again I would use monkfruit sweetener instead.

Cauliflower Cheesy Bread

This recipe restored my faith in cauliflower. I actually took a head of cauliflower and grated it which lead to inconsistency in the size of the "rice". For this particular recipe I would use a lot more spices than what was provided in the recipe. I also used roasted garlic, hoping it would umph the flavor. Didn't do much. Since my head of cauliflower was pretty big it crumbled the next day, so depending on how much cauliflower rice you produced from your head you might want to add an extra egg.

This really hit the spot. Now I'm curious how broccoli rice would stand up to this, especially since broccoli has more nutrient value.


These recipes were well worth keeping me completely satisfied this week. I wish I made double of everything, thank goodness I didn't or I would have ended up with too much left overs. I'm really excited about this upcoming week's recipes. It's the week of fat bombs! Stay tuned and happy eating!! ^^
