The Keto Diaries: Week One Reflections [No Pictures]

I can't believe it's been over a year since my last blog!! Trying to balance everything is much harder when you're financially support yourself. . . I need a sugar daddy. Hahaha! I feel that avenue has left the harbor long long ago. The thing is now I'm here with a new challenge to myself and as you see from the title it is quite the opposite of my Vegan Diaries.

QUESTION:
What made you choose to go keto?

ANSWER:
Going with how other blogs do their thing, I am going to start when I was an infant in my mom's womb and how I knew then and there . . . . and then finding out I love beef and then cheese, AND then beef AND cheese together. . . olive oil. . . blah!! The end.

On a genuine note, my friends have done it, they have seen results, and I have heard and read this was a successful diet/lifestyle to follow. Going from a field chasing down children to now a desk job has changed my activity levels drastically. Also coordinating my day has also been a challenge since I want to fit in a good hour of exercise, get 8 hours of sleep, take time to work on my social media, finish catching up to Brooklyn 99, make meals so I don't eat out. . . etc. . . OMG! I don't even have a kid yet!!

Everyone is  really going for "New Year, New Me!!" And more than it could have influence my decision it was a decision made weeks ahead of time; basically when I turned 30. Without delving into the skeletons in my closet, I had to sit down with myself and come to a realization that I NEED to take care of myself at any cost. When I was at my lowest weight in a while (267 lbs) I was totally doing myself and I felt wonderful. Trying to replicate the success in a different way now. Hence the start of the keto life. With that said here are my thoughts of my very first week of being on keto. =)


DAY 1 (January 6, 2019)

Sundays are usually my grocery shopping and meal prepping days. With the raining coming down and feeling exhausted from work I was too lazy to cook at the moment since I knew I had so much to prepare. . . SO LAZY!! The bulletproof coffee was already wearing out and if I didn't feed myself soon I would fall into the pit of over-eating and hating myself for the rest of the day.

Then I remembered my friend Christie mentioned I can still have fast food and keto. Not today self-loathing!!! I drove to In-N-out and ordered two double doubles protein style. I have to say other than the few stripes of bacon I ate and the excess fat bomb filling I made, it definitely curbed my hunger. . . as well as meal prepping and cleaning the kitchen. I had some bacon to snack on and excess fat bomb filling between my double doubles and going to bed. As for the first day, it wasn't as hard as I thought it was.

DAY 2 (January 7, 2019)

I am so ready to go for the work week ahead. . . disliking the rain though. After doing some more research I found out I couldn't have as much bell peppers as I thought I would like.

Note: 1 Cup Bell Peppers (raw) = 9g Carbs

This is not bad, pretty simple I don't know how much I can keep eating fajitas. . .

DAY 3 (January 8, 2019)

It's either my bulletproof coffee is really working today or keto is totally kicking in because I didn't really eat until 3pm. Is this a call of success? Meh maybe. I've also tripled the amount of water intake since I started so I don't get KETO FLU. Yeah, I didn't know it was a thing but it's a thing. Makes sense when your body is going through a sudden transition and it's trying maintain itself. Crossing fingers keto flu is out of sight.

I totally spend an hour researching about the keto flu and how to avoid it because the last thing I need right now is being on my period (sorry, not sorry for the intimate information), stressing out from work, and getting a flu that is not caused by the exposure of bacteria from someone else. Feeling exhausted from my body getting fed wonderful wonderful carbs and sugar to none of that at all I felt tired and went to bed early or is it because I'm growing old? Hmm the world may never know, lol.

DAY 4 (January 9, 2019)

FUUUUCCCCCCCCKKKKKK!!! I was not feeling well at all when I woke up this morning. Headache, costipation, feeling light-headed, cramps. . . what is this? *GASP* Keto flu?! NOOOOOOOOOoooOOoooOOOooOOOOOoooooo!!!!

From what I found out about the keto flu provided by DietDoctor.Com

~ SYMPTOMS OF THE KETO FLU ~
  • Fatigue  - - - - (From yesterday)
  • Headache - - - - (Happening right now. . . . -___- ) 
  • Irritability - - - - (Well, yeah I would be irritable too if I had a headache)
  • Difficulty focusing (“brain fog”) - - - - (Probably why it was hard getting reading for work)
  • Lack of motivation - - - - (Didn't want to go to work in the morning)
  • Dizziness - - - - (Paired with the light-headedness)
  • Sugar cravings - - - - (Wishing I had cookies)
  • Nausea - - - - X
  • Muscle cramps - - - - X

7 out of 9 is considered a C+ ish, therefore the keto flu was working through me at the moment. The best thing I did for myself was sleep another hour and drink as much water as possible. The rest of the day I had my coffee, grazed on  cashews and had a bowl of WHOLE MILK greek yogurt with some blueberries and stevia at the end of it all. It was weird to not feel super hungry with the little I ate. I didn't even go to sleep till 10 and that is pretty late, feeling like a child past their bedtime. Now I'm typing this at 7:30am the next morning regretting a tad bit of me staying up late.

DAY 5 (JANUARY 10, 2019)

I'm so excited about today!! ALL YOU CAN EAT KOREAN BARBECUE!!! Or is it b-a-r-b-e-Q-u-e?  I'm going ride the blaming-the-keto flu for a few more days. I'm really excited about having some quality time with one of my besties and also a fellow keto dieter. We don't like to say diet. . . lifestyle. I don't know what to say with this, it's something.

Dinner with AYCE KBBQ was pretty bomb and I've noticed I didn't eat as much as I know I would normally do. There was so much you can have and it was limited if the meat was marinated I ended up having:

- Kimchi (a ton)
- Corn cheese (yeah I know the carb was high but it was a 1/4 cup of corn so it didn't go over my carb limit)
- Short ribs
- Spicy pork belly (small portion because it was marinated)
- Brisket (dipping it in the oil and salt was amazing!!)
- Radish wraps
- Steamed egg
- Broccoli banchan

It was really filling and satisfying. Thank goodness my stomach wasn't going crazy from a day of eating little to a huge binge. After dinner I had 3 shots of tequila with soda water and called it a day. Tequila has no carbs!!! YESSSSS!!

DAY 6 (JANUARY 11, 2018)
I found out I can have SPAM!!! This is a glorious day because I had a Costco amount of Spam and I was disappoint real fast I might have to give it away. . . Now I don't and get to add Spam to the list of Keto-friendly items I can have happily.

Since I was working from home and I made Spam and eggs I was pretty much solid with everything. Actually, deep down I wish I had ketchup with my Spam. Love me some ketchup and spam. Other than the reminiscing of ketchup, I pretty much survived the day and I was really tired. Didn't sleep still 1030 but man and I slept in till 7am today (Saturday) . . . OMG! I thought today was Sunday, I guess that's what happens when you work from home on Fridays.

DAY 7 (JANUARY 12, 2018)
I didn't mention it from the last day, I had stomach pains last night (small annoying ones) I hope it's not the remainder of the keto flu and it's from the stress of work. I can be in denial for so long, I should embrace these symptoms as a way of my body telling me it's working. It sucks but it's working.

Not much will be going on today other than grocery shopping for next week's meals. I then later found out my keto crew confessed they went over the limit of carbs. T___T I wish I went over the limit of carbs!! First week is probably the easiest week and I feel once I delve more into it I'll reach a wall. Hopefully that wall hits after 3 months.

Overall, it was a great start and learning quite a ton. I'm glad there is a huge community out there as well as many friends who has gone through it. Forgot to mentioned I weighed myself in, 303 lbs. Yeeeaaahhh. Not proud to put it out there but we got to start somewhere right? Stay tuned for the next week and I hope this time around I'll be over the flu.
